1. Creamy Parsnip & Coconut Soup with Ginger

Ingredients:
– 500 g parsnips
– 1 onion
– 3 cm piece of fresh ginger
– 400 ml coconut milk
– 500 ml vegetable stock, oil, salt, pepper

Instructions:

  1. Chop and sauté onion, ginger, and parsnips in oil.

  2. Add stock and coconut milk, simmer for 20 minutes.

  3. Blend until smooth, season, and serve in the ceramic jar.


2. Mediterranean Lentil Stew

Ingredients:
– 250 g red lentils
– 1 zucchini, 1 red pepper, 2 carrots
– 1 can chopped tomatoes
– Garlic, olive oil, oregano, thyme

Instructions:

  1. Dice vegetables and cook in olive oil.

  2. Add lentils and tomatoes, cover with water.

  3. Season, simmer for 30 minutes, and serve warm in your ceramic jar.


3. Vanilla Semolina Pudding with Cinnamon Apples

Ingredients:
– 500 ml milk
– 50 g semolina
– 1 apple
– Vanilla, sugar, cinnamon

Instructions:

  1. Boil milk, whisk in semolina, add vanilla and sugar.

  2. Dice apple, sauté with cinnamon and a little sugar.

  3. Layer in the ceramic jar and serve warm or chilled.

 

 4. Elderberry Compote with Fresh Mint

Ingredients:
– 400 ml elderberry juice
– 2 tbsp cornstarch
– 2 tbsp sugar
– Fresh mint

Instructions:

  1. Bring juice to a boil, dissolve cornstarch in a little cold juice.

  2. Stir in, simmer until thickened.

  3. Add sugar and mint, pour into the ceramic jar, let cool slightly.
