Ingredients:
– 500 g parsnips
– 1 onion
– 3 cm piece of fresh ginger
– 400 ml coconut milk
– 500 ml vegetable stock, oil, salt, pepper

Add stock and coconut milk, simmer for 20 minutes.

– 250 g red lentils
