 Three Authentic Danish Recipes

1. Smørrebrød with Pickled Herring, Apple & Onion

Ingredients (4 servings):

  • 8 slices rye bread (organic)

  • 4 pickled herring fillets (organic)

  • 1 organic apple, thinly sliced

  • 1 organic red onion, sliced into rings

  • 2 tbsp organic sour cream

  • Fresh dill, salt, pepper

Preparation:

  1. Spread sour cream on rye bread slices.

  2. Place half a herring fillet on each slice.

  3. Garnish with apple slices and onion rings.

  4. Sprinkle with dill and season with pepper.

 Served beautifully on smørrebrød platters made of Polish pottery.

2. Danish Fish Gratin (Fisk i fad)

Ingredients (4 servings):

  • 500 g cod fillet (organic)

  • 400 g potatoes (organic), cooked & sliced

  • 200 g fresh spinach (organic)

  • 200 ml organic cream

  • 100 g organic cheese (grated)

  • 2 tbsp butter, salt, pepper, nutmeg

Preparation:

  1. Grease a ceramic baking dish with butter.

  2. Place a layer of potatoes on the bottom.

  3. Lightly sauté spinach in butter.

  4. Cut cod into chunks, season with salt & pepper.

  5. Layer potatoes, spinach, and fish.

  6. Pour cream on top, sprinkle with cheese.

  7. Bake at 180 °C for 30 min until golden.

 Perfectly baked in oven dishes made of Polish pottery.

3. Drømmekage from Brovst (Dream Cake)

Ingredients (for 1 cake):

  • 250 g organic flour

  • 250 g organic sugar

  • 4 organic eggs

  • 200 ml organic milk

  • 50 g butter

  • 2 tsp baking powder

Topping:

  • 100 g butter

  • 100 g desiccated coconut

  • 150 g brown sugar

  • 50 ml milk

Preparation:

  1. Whisk eggs and sugar until light and fluffy.

  2. Add milk and melted butter.

  3. Mix flour with baking powder and fold in.

  4. Pour into a greased ceramic dish, bake at 180 °C for 25 min.

  5. Melt topping ingredients in a pan.

  6. Spread topping over the hot cake and bake 5 more min.

 Best enjoyed served on cake plates of Polish pottery.
