Recipe Shopping List (4 servings) Preparation
1. Classic Andalusian Gazpacho 1 kg ripe tomatoes · 1 cucumber · 1 red bell pepper · 1 small red onion · 1 garlic clove · 50 g day-old white bread · 3 Tbsp olive oil · 2 Tbsp sherry vinegar · salt & pepper Blanch, peel and chop tomatoes. Cube vegetables; soak bread in cold water and squeeze dry. Blend all ingredients until silky. Season, chill at least 2 h, then ladle ice-cold into Polish Pottery soup bowls.
2. Green Herb Gazpacho 2 green bell peppers · ½ cucumber · 1 ripe avocado · 1 spring onion · 1 handful fresh spinach · ½ bunch parsley · ½ bunch coriander · juice of 1 lime · 3 Tbsp olive oil · 200 ml iced water · salt · minced jalapeño to taste Rough-chop veg and herbs. Blend with avocado, lime, oil, water and salt until smooth and pale green. Adjust heat with jalapeño, chill 1 h, serve in dip bowls for a vibrant starter.
3. Watermelon Gazpacho 600 g seedless watermelon · 400 g tomatoes · ½ red bell pepper · ½ cucumber · 1 small shallot · 2 Tbsp red-wine vinegar · 2 Tbsp olive oil · salt & pepper · fresh mint leaves Dice produce, peel tomatoes if preferred. Blend everything but mint; season and refrigerate 1 h. Pour into dessert jars, sprinkle with chopped mint — a refreshing sweet-savory finale.
