Recipe: The Perfect Organic Vanilla Sauce (for approx. 500 ml)

Ingredients:

• 1 fresh organic vanilla pod

• 300 ml organic whole milk

• 150 ml organic cream

• 3 organic egg yolks (free-range)

• 50 g raw cane sugar

• 1 tsp organic cornstarch (optional, for extra thickness)

• 1 pinch of sea salt

Preparation:

1. Prepare the vanilla pod:
   Slice the vanilla pod lengthwise and scrape out the seeds. Add both seeds and pod to a saucepan.

2. Heat the milk & cream:
   Combine milk, cream, vanilla seeds, and pod. Gently heat without boiling, then remove from the heat and let infuse for 10 minutes.

3. Mix egg yolks & sugar:
   In a bowl, whisk together the egg yolks, raw cane sugar, and a pinch of salt until smooth and creamy.

4. Combine the mixtures:
   Slowly pour the warm vanilla milk (remove the pod) into the egg mixture while stirring constantly.

5. Thicken the sauce:
   Pour the mixture back into the saucepan and gently heat over medium temperature, stirring continuously until the sauce thickens slightly (do not boil!).
   For a thicker texture, dissolve the cornstarch in a little cold milk and add it before heating.

6. Serve:
   Serve warm over apple strudel, red berry compote, ice cream, or crêpes — or cool it down for a chilled dessert version.

Tip:
Store in the refrigerator for up to 2–3 days. Reheat gently and stir before serving.
