Serves approx. 4–6

Ingredients

1 courgette, 1 aubergine, 2 red peppers, 250 g cherry tomatoes, 150 g mozzarella, 100–150 g prosciutto or salami, Parmesan, green and black olives, olive oil, balsamic vinegar, garlic, fresh basil, salt and pepper.

Preparation

Slice the courgette and aubergine and cut the peppers into wide strips.

Brush the vegetables with olive oil and cook them on the barbecue or in a griddle pan until tender and lightly charred.

Season with salt, a little garlic and olive oil.

Arrange mozzarella, cherry tomatoes and basil together to create small Caprese-style sections.

Loosely fold the prosciutto to give it volume.

Arrange the grilled vegetables on one side of the platter and the mozzarella and tomatoes on the other. Fill the spaces with olives, Parmesan and prosciutto.

Ingredients

Manchego cheese, chorizo, olives, roasted peppers, small potatoes, 2 tbsp olive oil, smoked paprika, sea salt and aioli.

Preparation

Boil the potatoes in their skins until tender. Cut them in half and briefly fry them in olive oil with smoked paprika.

Cut the Manchego into small triangles and the chorizo into thin slices.

Arrange the potatoes, cheese, chorizo, olives and roasted peppers in separate groups around the platter.

Serve the aioli in a small bowl alongside.

Ingredients

200 g feta, 1 cucumber, 250 g cherry tomatoes, Kalamata olives, small peppers, red onion, oregano, olive oil, lemon juice and pita bread.

Preparation

Cut the feta into cubes or larger pieces. Drizzle with a little olive oil and sprinkle with oregano.

Slice the cucumber, halve the tomatoes and finely slice the red onion.

Arrange everything loosely across the platter. Add Kalamata olives, peppers and a few lemon wedges.

Warm the pita bread briefly, cut into triangles and arrange around the edge of the platter in a fan.

Finish the vegetables and feta with a little olive oil and fresh lemon juice.

Ingredients

Brie or Camembert, Comté, goat's cheese, cured sausage, grapes, pear, walnuts, fig mustard and a fresh baguette.

Preparation

Take the cheeses out of the refrigerator a little before serving.

Cut the Brie or Camembert into wedges, the Comté into bite-sized pieces and the goat's cheese into slices.

Arrange the cured sausage in overlapping slices.

Divide the grapes into small bunches and slice the pear shortly before serving.

Arrange everything in relaxed groups across the platter. Use walnuts to fill smaller spaces.

Serve with fresh baguette and fig mustard.
