• 120 g pancetta, diced

• 2 tbsp extra virgin olive oil

• 1 large onion, finely chopped

• 2 garlic cloves, minced

• 2 celery stalks, chopped

• 2 carrots, diced

• 150 g potatoes, diced

• 1 zucchini, diced

• 150 g green beans, chopped

• 1 can (400 g) chopped tomatoes

• 1 litre vegetable stock

• 250 ml water

• 100 g small pasta (e.g., ditalini)

• 150 g cooked white beans

• 1 handful fresh spinach

• 1 bunch fresh basil

• Salt, pepper, 1 tsp dried oregano

• Freshly grated Parmesan for serving

Preparation Instructions:

1. Heat olive oil in a large pot. Add pancetta and fry until golden. Add onion and garlic; sauté until soft.

2. Add carrots, celery, potatoes, zucchini, and green beans. Cook for 5 minutes.

3. Pour in tomatoes, vegetable stock, water, and seasonings. Bring to a boil, then simmer for 20 minutes.

4. Stir in pasta and cook for 8–10 minutes until al dente. Add white beans and warm through.

5. Fold in spinach and basil just before serving.
