Cake Recipes for Your Polish Pottery Cake Platters
Classic Lemon Cake
Lemon cake is especially well suited to a long serving platter and can be sliced before serving.
Ingredients:
250 g soft butter
200 g sugar
4 eggs
250 g flour
2 tsp baking powder
1 organic lemon
100 ml milk
For the glaze: a little lemon juice and icing sugar
Preparation:
Beat the butter and sugar until creamy.
Add the eggs one at a time.
Mix the flour and baking powder and stir into the mixture alternately with the milk.
Finely grate the lemon zest and add it together with a little lemon juice.
Transfer the mixture to a greased loaf tin and bake at approx. 175°C conventional heat for around 50 to 60 minutes.
Once cooled, mix lemon juice with icing sugar to make a glaze and pour it over the cake.
Slice the cake and arrange the slices slightly overlapping on a long Polish Pottery platter.
Moist Apple Cake
Ingredients:
200 g butter
180 g sugar
3 eggs
250 g flour
2 tsp baking powder
3 to 4 apples
1 tsp cinnamon
a little lemon juice
Preparation:
Beat the butter and sugar until creamy and gradually add the eggs.
Add the flour and baking powder.
Peel and core the apples and cut them into thin slices.
Transfer the batter to a greased baking tin and arrange the apple slices on top.
Sprinkle with a little cinnamon.
Bake at approx. 175°C conventional heat for around 40 to 50 minutes.
Once cooled, cut into pieces and serve on a round or large oval platter.
Classic Marble Cake
Ingredients:
250 g butter
200 g sugar
4 eggs
300 g flour
2 tsp baking powder
100 ml milk
2 tbsp cocoa powder
1 tsp vanilla sugar
Preparation:
Beat the butter and sugar until creamy.
Add the eggs one at a time.
Mix the flour and baking powder and stir into the batter together with the milk.
Remove about one third of the batter and mix it with the cocoa powder.
Pour the light batter into a greased tin first, followed by the dark batter.
Use a fork to draw a spiral through both mixtures.
Bake at approx. 175°C conventional heat for around 50 to 60 minutes.
Once cooled, cut into slices and present on a long or oval platter.
Simple Chocolate Cake
Ingredients:
200 g butter
180 g sugar
3 eggs
200 g flour
40 g cocoa powder
2 tsp baking powder
120 ml milk
100 g chopped chocolate
Preparation:
Beat the butter and sugar until creamy.
Gradually add the eggs.
Mix the flour, cocoa powder and baking powder and stir into the batter together with the milk.
Fold in the chopped chocolate at the end.
Transfer to a greased baking tin and bake at approx. 175°C for around 40 to 50 minutes.
Once cooled, cut into pieces.
The cake looks especially attractive on a large platter decorated with fresh berries.
Apple Crumble Cake
Ingredients for the base:
250 g flour
125 g butter
80 g sugar
1 egg
1 tsp baking powder
For the topping:
3 to 4 apples
For the crumble:
150 g flour
100 g butter
80 g sugar
a little cinnamon
Preparation:
Knead the ingredients for the base together and spread the dough in a greased baking tin.
Peel the apples, cut them into thin slices and arrange them over the dough.
Rub the flour, butter, sugar and a little cinnamon together with your fingers to make crumbs.
Scatter the crumble over the apples.
Bake at approx. 180°C conventional heat for around 40 minutes.
Once cooled, cut into pieces and arrange on a large rectangular or oval platter.
Carrot Cake with Almonds
Ingredients:
250 g finely grated carrots
200 g ground almonds
150 g sugar
4 eggs
100 g flour
1 tsp baking powder
1 tsp cinnamon
a little grated lemon zest
Preparation:
Beat the eggs and sugar for several minutes until light and fluffy.
Fold in the carrots, almonds, flour, baking powder, cinnamon and a little finely grated lemon zest.
Transfer the batter to a greased tin.
Bake at approx. 175°C conventional heat for around 40 to 45 minutes.
Once cooled, the cake can be dusted with a little icing sugar.
Served on a large round Polish Pottery plate, it is ideal for spring and Easter, but tastes wonderful throughout the year.
Blueberry Yoghurt Cake
Ingredients:
250 g flour
150 g sugar
2 eggs
150 g natural yoghurt
100 ml neutral vegetable oil
2 tsp baking powder
150 g blueberries
a little vanilla
Preparation:
Mix the eggs and sugar.
Add the yoghurt and oil.
Mix the flour, baking powder and a little vanilla and stir into the batter.
Carefully fold in the blueberries at the end.
Transfer to a greased tin and bake at approx. 175°C for around 35 to 45 minutes.
Once cooled, cut into pieces and decorate with a few fresh blueberries on a serving platter.
Simple Nut Cake
Ingredients:
200 g butter
180 g sugar
4 eggs
200 g flour
150 g ground hazelnuts or almonds
2 tsp baking powder
100 ml milk
Preparation:
Beat the butter and sugar until creamy.
Add the eggs one at a time.
Mix the flour, ground nuts and baking powder and add alternately with the milk.
Transfer the batter to a greased tin.
Bake at approx. 175°C conventional heat for around 45 to 55 minutes.
Allow to cool completely, then slice and serve on a long or oval platter.
