Apple Strudel with French Vanilla Sauce
Ingredients for the Strudel
For the Dough
- 250 g French organic T65 wheat flour
- 1 tbsp French organic olive oil
- 1 organic egg
- 120 ml lukewarm water
- 1 pinch Fleur de Sel
For the Filling
- 4 French organic apples
- 60 g organic raisins
- 40 g roasted pine nuts
- 80 g French organic butter
- 60 g organic cane sugar
- 1 tsp Ceylon cinnamon
- zest of 1 organic lemon
- 50 g homemade brioche breadcrumbs
Ingredients for the French Vanilla Sauce
- 500 ml French organic whole milk
- 1 organic Madagascar vanilla bean
- 4 organic egg yolks
- 60 g organic cane sugar
- 1 tbsp French organic cream
Preparation
Strudel Dough
Knead all ingredients into a smooth elastic dough. Brush lightly with oil and let rest for at least 30 minutes.
Prepare the Filling
Peel and finely slice the apples. Mix with raisins, pine nuts, sugar, cinnamon, and lemon zest.
Toast the brioche breadcrumbs in butter until golden brown.
Shape the Strudel
Stretch the dough very thinly. Brush with butter, sprinkle with brioche breadcrumbs, and add the apple filling. Carefully roll it up.
Bake at 190 °C for approximately 35–40 minutes until golden brown.
