Typical Bone Types and Sizes for Grill & BBQ:

  1. Cutlet Bones

    • Length: approx. 8–15 cm

    • Width: 2–3 cm

    • Features: Flat bone, often with a rim of meat, especially from pork or lamb chops.

  2. Sparerib Bones

    • Length: approx. 7–12 cm

    • Width: 1–2 cm

    • Features: Narrow, elongated bones, often coated in BBQ sauce.

  3. Pork Knuckle Bones

    • Length: approx. 10–16 cm

    • Width: 3–5 cm

    • Features: Thick, sturdy bone, usually with remnants of meat and cartilage.

  4. Ribs

    • Length: approx. 6–10 cm

    • Width: 1.5–2.5 cm

    • Features: Thin but often greasy bones with traces of grill marinade.

  5. Pork Shoulder Bones

    • Length: approx. 12–18 cm

    • Width: 3–4 cm

    • Features: Large and robust, often from pulled pork or slow-roasted cuts.

 

Tip for Restaurants:
Provide at least two containers per table – one for bones and one for other food waste. For large grill events or BBQ buffets, lidded containers are especially hygienic and visually appealing.
