 Four Classic Danish Side Dish Recipes

 

1. Fried Potatoes with Onions (Stegte kartofler)

Ingredients (serves 4):

  • 800 g organic waxy potatoes

  • 2 organic onions

  • 3 tbsp organic butter or lard

  • Salt & pepper

Preparation:

  1. Boil potatoes in their skins, peel, and slice.

  2. Slice onions into rings.

  3. Fry potatoes in hot butter/lard until golden and crispy.

  4. Add onions, season, and serve hot.

 Serve in Polish pottery potato bowls.

 

2. Danish Potato Gratin (Kartoffelgratin)

Ingredients (serves 4):

  • 800 g organic potatoes

  • 250 ml organic cream

  • 1 clove organic garlic

  • 100 g organic grated cheese

  • Salt, pepper, nutmeg

Preparation:

  1. Peel and thinly slice the potatoes.

  2. Mix chopped garlic with cream.

  3. Layer potatoes in a greased Polish pottery baking dish.

  4. Pour cream over, sprinkle with cheese.

  5. Bake at 180 °C for about 40 min until golden.

 

3. Danish Cucumber Salad (Agurkesalat)

Ingredients (serves 4):

  • 1 large organic cucumber

  • 100 ml organic apple cider vinegar

  • 50 g organic sugar

  • Salt, white pepper, fresh dill

Preparation:

  1. Slice cucumber very thinly.

  2. Mix vinegar, sugar, salt & pepper.

  3. Marinate cucumber slices for at least 30 min.

  4. Garnish with dill before serving.

 Perfect in small Polish pottery side bowls.

 

4. Danish Braised Red Cabbage (Rødkål)

Ingredients (serves 4):

  • 1 small organic red cabbage

  • 2 organic apples, diced

  • 2 tbsp organic butter

  • 100 ml organic apple cider vinegar

  • 100 ml organic red wine

  • 2 tbsp sugar, salt, pepper, 1 bay leaf

Preparation:

  1. Finely shred red cabbage, sauté in butter.

  2. Add apples, vinegar, wine, and sugar.

  3. Season with salt, pepper & bay leaf.

  4. Simmer gently, covered, for about 45 min.

 Beautifully served in festive Polish pottery bowls.
