Ingredients (4 servings):

  • 8 fresh organic herrings, cleaned

  • 2 organic onions

  • 100 g organic wholemeal flour

  • Salt, pepper, organic rapeseed oil

Preparation:

  1. Season herrings, coat with flour.

  2. Fry in rapeseed oil until golden.

  3. Serve with onion rings.

 

2. Oven-Baked Salmon with Dill (Ovnbagt laks med dild)

Ingredients:

  • 800 g organic salmon fillet

  • 1 bunch organic dill

  • 2 organic lemons

  • 50 ml organic olive oil

  • Salt, pepper

Preparation:

  1. Place salmon in a Polish pottery oven dish.

  2. Season with dill, lemon juice, oil, salt & pepper.

  3. Bake at 180 °C for 20 minutes.

 

3. Cod with Mustard Sauce (Torsk med sennepssovs)

Ingredients:

  • 600 g organic cod fillet

  • 200 ml organic cream

  • 2 tbsp organic mustard

  • 1 tbsp organic butter

  • Salt, pepper

Preparation:

  1. Steam or gently poach the cod.

  2. Prepare a sauce from cream, butter & mustard.

  3. Serve cod with the sauce and fresh parsley.

 

 Three Danish Seafood Dishes

 

1. Mussels in White Wine (Blåmuslinger i hvidvin)

Ingredients (4 servings):

  • 1.5 kg fresh organic mussels

  • 2 organic shallots

  • 2 organic garlic cloves

  • 250 ml organic white wine

  • 1 bunch organic parsley

Preparation:

  1. Clean mussels, discard damaged ones.

  2. Sauté shallots & garlic, deglaze with wine.

  3. Add mussels, cook 8 minutes until shells open.

 

2. Shrimp in Garlic Butter (Rejer i hvidløgssmør)

Ingredients:

  • 400 g organic shrimp

  • 3 organic garlic cloves

  • 50 g organic butter

  • 1 tbsp organic lemon juice

  • Salt, pepper

Preparation:

  1. Melt butter, sauté garlic.

  2. Add shrimp, cook 3–4 minutes.

  3. Season with lemon juice, salt & pepper.

 

3. Scallops with Parsley Oil (Kammuslinger med persilleolie)

Ingredients:

  • 8 organic scallops

  • 50 ml organic olive oil

  • 1 bunch organic parsley

  • Salt, pepper

Preparation:

  1. Sear scallops briefly (1 min per side).

  2. Blend parsley with olive oil.

  3. Drizzle parsley oil over scallops before serving.
