 Recipe: Poultry Jus – Simmered 24–48 Hours

This poultry jus is delicate and deeply flavored, drawing richness from a mix of bones and meat cuts.

 

 Base Ingredients:

  • Chicken carcasses (backs, necks, wings)

  • A small portion of turkey and duck bones (for depth)

  • 2 kg chicken thighs with meat (adds collagen and body)

  • 1 kg root vegetables (onion, carrot, celery, leek)

  • 2–3 tbsp tomato paste

  • 1 bottle dry white wine

  • 5–6 L cold water

  • Fresh herbs: thyme, parsley, bay leaf

  • Garlic, peppercorns

 

Instructions:

  1. Roast bones at 220 °C until golden brown.

  2. Sauté vegetables with tomato paste in a large pot.

  3. Add bones and meat, deglaze with wine, reduce.

  4. Fill with water and herbs.

  5. Simmer gently for 24–48 hours – do not boil.

  6. Skim regularly and remove fat.

  7. Strain through fine mesh, reduce further if needed.

 

Result:
A rich, clear poultry jus – perfect for poultry, veal, or vegetable dishes. Beautifully served in a Polish pottery sauce spoon or bowl.
