Why strain your stocks?

Clear sauces and stocks are a hallmark of refined cooking. Small fragments of bone or vegetable fiber can ruin the texture and mouthfeel of an otherwise perfect jus.

By pouring the liquid slowly through a fine cloth or chinois, you achieve clarity and elegance. That’s where the right bowl, strainer, and ladle – especially made from Polish pottery – make all the difference.

 

Recipe: Fine Fish Stock (Fond de Poisson Noble)

A light, aromatic base for classic sauces and seafood dishes

 

Fish bones & shells (approx. 1.5–2 kg):

  • Salmon (clean bones and heads – no blood or skin)

  • Pike-perch (zander) – clean spines and bones

  • Plaice or sole

  • Crustacean shells (e.g., shrimp, langoustine, lobster)

 

Additional ingredients:

  • 300 g white onion (thinly sliced)

  • 1 leek (white part only)

  • 2 celery stalks

  • 1 bay leaf, 2–3 sprigs thyme

  • 4 white peppercorns

  • 1 glass dry white wine or Noilly Prat

  • 2.5 L cold water

  • No salt (the fond should remain neutral)

 

Preparation:

  1. Rinse fish bones thoroughly under cold water and drain well.

  2. Sweat onions gently in butter – no browning.

  3. Add leek, celery, and aromatics.

  4. Layer the bones on top.

  5. Pour in cold water and wine, heat to ~80 °C.

  6. Simmer gently for max. 25–30 minutes – never boil.

  7. Skim off impurities.

  8. Carefully ladle through a fine cloth into a Polish pottery bowl.

 

Result:

A clear, delicate, aromatic fish stock – the perfect base for sauces like beurre blanc, fumet, or a velouté de poisson.
