Roasting & Casserole Dishes – Danish Classics in Polish Pottery

 Three Classic Danish Roasts

 

 

1. Roast Pork with Crackling (Flæskesteg)

 

Ingredients (serves 4):

  • 1.2 kg organic pork roast with rind

  • 3 organic onions

  • 2 organic carrots

  • 500 ml organic vegetable stock

  • 2 bay leaves, salt, pepper

Preparation:

  1. Score the rind and rub generously with salt.

  2. Place in a Polish pottery roasting dish with vegetables & stock.

  3. Roast at 200 °C for 90 minutes, basting regularly.

  4. Serve with red cabbage and potatoes.

 

2. Danish Beef Roast (Oksebryst)

 

Ingredients:

  • 1.2 kg organic beef brisket/shoulder

  • 2 organic carrots, 1 celery root, 1 onion

  • 500 ml organic beef stock

  • 200 ml organic red wine

  • Thyme, salt, pepper

Preparation:

  1. Brown meat, transfer to a Polish pottery dish.

  2. Sauté vegetables, deglaze with wine & stock, add to dish.

  3. Season with thyme, roast at 160 °C for 2 hours.

  4. Serve with potatoes and sauce.

 

3. Roast Duck with Apples & Prunes (Andesteg)

 

Ingredients:

  • 1 organic duck (approx. 2 kg)

  • 2 organic apples, 2 organic onions

  • 100 g organic prunes

  • Salt, pepper, marjoram

Preparation:

  1. Stuff duck with apples, onions & prunes, season.

  2. Place in Polish pottery roasting dish, roast 2 hours at 180 °C.

  3. Baste with juices during roasting.

  4. Serve with red cabbage & caramelized potatoes.

 

 Three Danish Casserole Classics

 

 

1. Potato Gratin with Bacon (Kartoffelgratin med bacon)

 

Ingredients (serves 4):

  • 800 g organic potatoes

  • 200 g organic bacon cubes

  • 300 ml organic cream

  • 1 organic onion

  • Salt, pepper, nutmeg

Preparation:

  1. Slice potatoes.

  2. Fry bacon & onion.

  3. Layer in Polish pottery casserole dish, pour cream over.

  4. Bake 45 min at 180 °C.

 

2. Danish Pasta Casserole (Pastagratin)

 

Ingredients:

  • 400 g organic pasta

  • 200 g organic ham cubes

  • 150 g organic grated cheese

  • 300 ml organic milk

  • 2 organic eggs

  • Salt, pepper, nutmeg

Preparation:

  1. Cook pasta al dente.

  2. Beat eggs with milk, season.

  3. Combine pasta, ham & cheese in Polish pottery dish, pour over.

  4. Bake 35 min at 180 °C until golden.

 

3. Vegetable Gratin with Cheese (Grøntsagsgratin)

 

Ingredients:

  • 500 g mixed organic vegetables (broccoli, carrots, cauliflower)

  • 200 g organic cheese

  • 200 ml organic cream

  • 2 organic eggs

  • Salt, pepper

Preparation:

  1. Blanch vegetables briefly.

  2. Beat eggs with cream, season.

  3. Arrange vegetables in Polish pottery dish, pour over, top with cheese.

  4. Bake 40 min at 180 °C.
