Recipe 1: Sernik – Polish Cheesecake (12 slices)

 

Ingredients (all organic)

  • 500 g organic quark (well drained)

  • 250 g organic cream cheese

  • 200 g organic sugar

  • 4 organic eggs

  • 1 organic vanilla bean (seeds scraped)

  • 1 organic lemon (zest)

  • 100 g organic butter (melted)

  • 50 g organic semolina

 

Preparation

  1. Preheat oven to 170 °C.

  2. Mix quark, cream cheese, sugar, eggs, vanilla and lemon zest until creamy.

  3. Stir in melted butter and semolina.

  4. Pour into a greased Polish Pottery baking dish.

  5. Bake for approx. 60 minutes until golden brown.

  6. Cool and dust with powdered sugar before serving.

 

Recipe 2: Pierogi Ruskie – Potato & Quark Dumplings (4 servings, approx. 40 pieces)

 

Ingredients (all organic)

Dough:

  • 500 g organic wheat flour

  • 250 ml warm organic water

  • 1 organic egg

  • 1 tsp organic salt

Filling:

  • 500 g cooked organic potatoes

  • 250 g organic quark

  • 1 large organic onion (finely chopped, sautéed golden in butter)

  • Salt & pepper to taste

????‍???? Preparation

  1. Knead flour, water, egg and salt into an elastic dough. Let rest for 30 minutes.

  2. Mash potatoes, mix with quark and onion, season.

  3. Roll dough thinly, cut out circles, fill and fold over. Seal edges well.

  4. Cook in gently boiling salted water for 3–4 minutes until they float.

  5. Serve with melted organic butter or onions in Polish Pottery bowls.
