  • 350 ml lukewarm water

  • 100 g sourdough starter

  • 10 g salt

Preparation:

  1. Mix starter, water, and 200 g flour, let rest for 12 hours.

  2. Add remaining flour and salt, knead into dough.

  3. Place in a greased loaf tin, proof for 2 hours.

  4. Bake at 220 °C (425 °F) for 45–50 minutes.

 

2. Egg Spread (Pasta jajeczna)

Ingredients (serves 4):

  • 6 organic eggs, hard-boiled

  • 3 tbsp organic mayonnaise

  • 1 tsp organic mustard

  • 1 bunch chives, chopped

  • Salt & pepper

Preparation:

  1. Finely chop eggs.

  2. Mix with mayonnaise, mustard, and chives.

  3. Season to taste.

 

3. Herbed Quark (Twaróg ziołowy)

Ingredients (serves 4):

  • 250 g organic quark (or Greek yogurt)

  • 2 tbsp organic sour cream

  • 1 bunch fresh herbs (dill, parsley, chives)

  • Salt & pepper

Preparation:

  1. Mix quark with sour cream until creamy.

  2. Chop herbs finely, fold into mixture.

  3. Season to taste.

 

4. Oscypek (Smoked Sheep’s Cheese) with Lingonberries

Ingredients (serves 4):

  • 4 slices Oscypek (or other smoked cheese)

  • 2 tbsp organic butter

  • 3 tbsp lingonberry jam

Preparation:

  1. Pan-fry cheese in butter until golden.

  2. Serve immediately with lingonberry jam.

Ingredients:

  • 200 g organic Krakowska sausage, sliced

  • Freshly baked rye bread
