Recipe: Refined Matjes Tartar

A sophisticated, refined matjes (young herring) tartar served on Polish pottery—perfect for tasting menus or elegant starters.

Ingredients (for approx. 4 servings):

  • 4–6 Matjes herring double fillets, finely diced

  • 1 small mild onion (white, red, or pink), finely diced

  • ½ apple, seeded and diced (leave skin on for color, optional)

  • Fresh parsley or dill, finely chopped

  • Lemon zest (grated)

  • Optional: a pinch of finely chopped red chili

  • 2–3 tbsp crème fraîche or drained Greek yogurt

  • Salt & freshly ground black pepper

  • Optional: 1–2 tsp capers, finely diced, plus a splash of caper brine

Preparation:

  1. Dice the Matjes fillets into small cubes; add to a bowl.

  2. Add finely diced onion, apple, herbs, and lemon zest. If desired, add chili for a hint of heat.

  3. Gently fold in crème fraîche or yogurt; season with salt and pepper. Add capers and a bit of brine if using.

  4. Chill briefly to meld flavors—ideal dropped into a small tasting bowl.

Presentation Tip:
Serve portioned with a small spoon on a tasting plate. Garnish with a thin herb sprig and a micro herb leaf for elegance. Optionally place atop a buttered rye or pumpernickel toast.
