 Five Authentic Tapas Recipes (all organic ingredients)

 

 

1. Patatas Bravas (crispy potatoes with spicy sauce) – Serves 4

 

Ingredients

  • 600 g organic potatoes

  • 2 tbsp organic olive oil

  • 1 onion, 2 garlic cloves (organic)

  • 200 g organic tomatoes (passata)

  • 1 tsp organic paprika (sweet & hot)

  • Salt, pepper

Preparation

  1. Peel and cube potatoes, fry until golden and crispy.

  2. Sauce: sauté onion & garlic, add tomatoes & paprika, simmer 10 min.

  3. Serve potatoes in tapas bowls with sauce on top.

 Wine: Young Tempranillo (Joven)

 

2. Gambas al Ajillo (garlic prawns) – Serves 4

 

Ingredients

  • 400 g organic prawns (peeled)

  • 5 organic garlic cloves

  • 50 ml organic olive oil

  • 1 organic chili pepper

  • Fresh parsley, salt

Preparation

  1. Heat olive oil, briefly fry garlic and chili.

  2. Add prawns, cook for 2–3 min.

  3. Sprinkle with parsley and serve hot in Polish pottery cazuelas.

 Wine: Albariño (Rías Baixas)

 

3. Tortilla Española (Spanish omelette) – Serves 4

 

Ingredients

  • 6 organic eggs

  • 500 g organic potatoes

  • 1 large organic onion

  • 4 tbsp organic olive oil

  • Salt

Preparation

  1. Slice potatoes & onion, cook slowly in oil until tender.

  2. Mix with beaten eggs.

  3. Cook in a pan until set, flip and brown the other side.

  4. Cut into wedges and serve on Polish pottery tapas plates.

 Wine: Rosado from Navarra

 

4. Albondigas en Salsa de Tomate (meatballs in tomato sauce) – Serves 4

 

Ingredients

  • 400 g organic minced beef

  • 1 organic egg, breadcrumbs, parsley

  • 1 onion, 2 garlic cloves (organic)

  • 400 g organic tomatoes (passata)

  • Olive oil, salt, pepper

Preparation

  1. Mix beef with egg, breadcrumbs & herbs, form small balls.

  2. Fry in oil until browned, remove.

  3. Sauté onion & garlic, add tomatoes, simmer into a sauce.

  4. Return meatballs and simmer 15 min.

 Wine: Rioja Crianza

 

5. Pimientos de Padrón (fried green peppers) – Serves 4

 

Ingredients

  • 300 g organic Padrón peppers

  • 2 tbsp organic olive oil

  • Sea salt

Preparation

  1. Fry peppers in olive oil over medium heat until blistered.

  2. Sprinkle with sea salt and serve hot in tapas bowls.
