 Three Special Paella Variations with Organic Ingredients

 

1. Paella de Mariscos (Seafood Paella) – Serves 4

 Ingredients (all organic & fresh)

  • 300 g organic king prawns

  • 300 g organic mussels

  • 200 g organic squid rings

  • 400 g organic short-grain paella rice

  • 1 l homemade fish stock (organic fish bones, soup vegetables, bay leaf)

  • 1 red organic bell pepper

  • 150 g organic peas

  • 2 organic tomatoes, grated

  • 3 tbsp organic extra virgin olive oil

  • 1 tsp organic saffron threads

  • Salt, pepper

 

 Preparation

  1. Soak saffron in a little hot stock.

  2. Briefly sauté prawns and squid, add tomatoes and peppers.

  3. Stir in the rice, pour over stock and saffron.

  4. Add mussels and peas on top.

  5. Simmer for about 20 minutes until the rice is tender.

  6. Serve in paella bowls made of Polish Pottery.

2. Paella de Pollo (Chicken Paella) – Serves 4

 Ingredients (all organic & fresh)

  • 600 g organic chicken thighs (cut into pieces)

  • 400 g organic paella rice

  • 1 large organic onion

  • 1 green & 1 red organic bell pepper

  • 2 organic tomatoes, grated

  • 800 ml homemade chicken stock (organic chicken, root vegetables, bay leaf)

  • 3 tbsp organic olive oil

  • 1 tsp organic paprika

  • 1 pinch organic saffron

 

Preparation

  1. Brown chicken pieces well, add vegetables.

  2. Stir in the rice, pour over stock and saffron.

  3. Let simmer for about 20 minutes until the rice is cooked and the chicken tender.

3. Paella Valenciana (The Classic from Valencia) – Serves 4

 Ingredients (all organic & fresh)

  • 300 g organic rabbit meat (cut into pieces)

  • 300 g organic chicken meat

  • 150 g organic green beans

  • 150 g organic artichoke hearts

  • 400 g organic paella rice

  • 1 l homemade chicken stock

  • 2 organic tomatoes

  • 3 tbsp organic olive oil

  • 1 tsp organic saffron

  • Fresh rosemary, salt, pepper

 

Preparation

  1. Brown the meat until golden.

  2. Add vegetables and tomatoes.

  3. Stir in the rice and pour over saffron-infused stock.

  4. Simmer for 20–25 minutes.
