Stew & Soup Bowls in Polish Ceramics

Soups and stews are a cornerstone of German cuisine – warming in winter, light and nourishing in summer. In stew & soup bowls made of Polish Ceramics, these dishes not only look beautiful on the table, but also stay hot for longer thanks to the excellent heat retention of the material.

Recipes (for 4 people, with organic ingredients & homemade broth)

Basic Recipe: Homemade Organic Broth

Ingredients:

  • 1.5 kg organic beef bones (or chicken carcass for poultry stock)

  • 3 organic carrots

  • 2 organic onions (halved with skin, roasted)

  • 200 g organic celeriac

  • 1 organic leek

  • 2 organic bay leaves

  • 5 black peppercorns

  • 2 cloves

  • 1 bunch organic parsley

  • 3 L cold water

  • Sea salt to taste

Method:

  1. Roast bones in oven at 200 °C for 25 min.

  2. Transfer to large pot, cover with cold water.

  3. Roughly chop vegetables, roast onions – add everything to pot.

  4. Add spices & parsley.

  5. Slowly bring to boil, simmer gently 3–4 hours (don’t boil hard).

  6. Strain, skim off fat, season with salt.

 Use as base for all soups below.

 

1. Classic German Potato Soup with Marjoram

Ingredients:

  • 1 L homemade broth

  • 600 g organic potatoes (starchy)

  • 2 organic carrots

  • 100 g organic celeriac

  • 1 organic leek

  • 1 small organic onion

  • 2 tbsp organic butter

  • 2 tsp fresh organic marjoram

  • 150 g organic bacon cubes (optional)

  • 2 pairs organic Vienna sausages

  • Salt & pepper

Method:

  1. Dice vegetables.

  2. Render bacon in butter, sauté onion.

  3. Add potatoes & vegetables, cover with broth.

  4. Simmer 25 min.

  5. Blend half lightly, return for creamy texture.

  6. Slice sausages, warm through.

  7. Sprinkle with marjoram & serve.

 

2. Hearty Goulash Soup with Beef & Paprika

Ingredients:

  • 1 L homemade beef broth

  • 500 g organic beef (shoulder/shank, cubed)

  • 2 organic onions

  • 2 organic bell peppers (red & yellow)

  • 2 organic potatoes

  • 2 tbsp sweet paprika + 1 tsp hot paprika

  • 2 tbsp organic clarified butter

  • 2 organic garlic cloves

  • Salt, pepper

Method:

  1. Brown meat in clarified butter.

  2. Add onions & garlic, sauté.

  3. Stir in paprika briefly.

  4. Pour in broth, simmer 60 min.

  5. Add potatoes & peppers, cook 20 min.

  6. Adjust seasoning.

 

3. Traditional Lentil Stew with Organic Sausages

Ingredients:

  • 1 L homemade vegetable broth

  • 250 g organic brown lentils

  • 2 organic carrots

  • 1 organic celery stalk

  • 1 organic onion

  • 2 organic potatoes

  • 2 tbsp organic apple vinegar

  • 4 organic Vienna sausages

  • 1 bay leaf

  • 1 tsp organic thyme

  • Salt, pepper

Method:

  1. Rinse lentils.

  2. Sauté vegetables in oil.

  3. Add broth, lentils, bay leaf, thyme.

  4. Simmer 40 min.

  5. Add potatoes, cook 20 min.

  6. Finish with vinegar, salt, pepper.

  7. Slice sausages, warm through.

 

4. Classic German Pea Stew with Bacon

Ingredients:

  • 1 L homemade broth

  • 300 g organic dried peas (soaked overnight)

  • 200 g organic bacon

  • 1 organic onion

  • 2 organic carrots

  • 100 g organic celeriac

  • 1 organic potato

  • 1 tsp organic marjoram

  • Salt, pepper

Method:

  1. Drain peas, rinse.

  2. Fry bacon, add onion & vegetables.

  3. Pour in broth, add peas.

  4. Simmer 60–70 min.

  5. Add diced potato, cook 20 min.

  6. Season with marjoram, salt, pepper.
