Ingredients:

  • 1 kg organic waxy potatoes

  • 2 organic onions

  • 100 g organic bacon cubes

  • 3 tbsp organic clarified butter

  • Sea salt, black pepper, fresh parsley

Preparation:

  1. Boil potatoes in their skins, peel, let cool, and slice.

  2. Fry bacon in butter, add onions and cook until golden.

  3. Add potato slices and fry until crispy.

  4. Season with salt, pepper, and parsley.

 

2. Classic Thuringian Potato Dumplings

Ingredients:

  • 1.5 kg organic potatoes (half starchy, half waxy)

  • 50 g organic breadcrumbs roasted in butter (optional filling)

  • 2 tbsp organic potato starch

  • Salt, nutmeg

Preparation:

  1. Boil half of the potatoes, mash and let cool.

  2. Grate the rest raw, squeeze out liquid, save starch.

  3. Mix everything together with seasoning and reserved starch.

  5. Simmer in salted water for 20 min (do not boil).

Ingredients:

Preparation:

  1. Boil potatoes in their skins, peel and slice.
