Each recipe yields about 200–250 g of sauce – enough for 4 servings.

# Sauce Ingredients Tip
1 Garlic Aioli 200 g mayonnaise · 2–3 garlic cloves (pressed) · 1 tsp lemon juice · salt & pepper Flavour deepens after a few hours in the fridge.
2 Herb Rémoulade 200 g mayonnaise · 1 tsp mustard · 1 finely diced gherkin · 2 tsp chopped capers · 1 tsp lemon juice · 1 Tbsp each parsley, dill, chives Serve well chilled for extra freshness.
3 Mango Curry Sauce 150 g mayonnaise · 50 g yoghurt · 1 tsp mild curry powder · 3 Tbsp mango chutney (or 50 g puréed mango) · salt, optional chili Adjust heat with extra curry or chili.
4 Sriracha Mayo 200 g mayonnaise · 1–2 Tbsp sriracha · 1 tsp lime juice · ½ tsp honey Tweak the spice level to taste.
5 Whisky Cocktail Sauce 150 g mayonnaise · 2 Tbsp ketchup · 1 tsp Worcestershire sauce · 1 Tbsp whisky · ½ tsp lemon juice · salt & pepper Try a smoky whisky for deeper flavour.
6 Mustard-Dill Cream 150 g mayonnaise · 50 g crème fraîche · 2 tsp coarse mustard · 1 tsp honey · 1–2 Tbsp fresh dill · salt & pepper Excellent with fish fondue.
7 Smoky Paprika Mayo 200 g mayonnaise · 1 tsp smoked paprika · ½ tsp lemon juice · 1 Tbsp finely diced roasted pepper Adds a gentle smoky note.
8 Herb-Garlic Yoghurt Dip 150 g mayonnaise · 50 g yoghurt · 1 tsp lemon juice · 1 garlic clove · mixed fresh herbs (e.g., chives, parsley, basil) · salt & pepper Light and fresh – great with veg sticks too.
9 Tandoori Mayo 200 g mayonnaise · 1 tsp tandoori spice mix · 1 tsp tomato paste · 1 tsp lemon juice · optional pinch cumin Perfect alongside chicken fondue.
10 Avocado Lime Dip 150 g mayonnaise · 1 small ripe avocado (mashed) · 1 tsp lime juice · 1 garlic clove · salt, chili Serve immediately to keep the vibrant green colour.
